About the coffee and the producer:
Edwin Noreño is one of Colombia’s true processing obsessives. Known among friends as “El Alquimista” (the alchemist), Edwin has dialed in a wide repertoire of fermentation profiles, often using multiple fermentations in sequence to achieve a desired expression. This microlot was processed using three distinct fermentations and the addition of a custom fermentation solution packed with fresh and dried fruit to infuse the parchment coffee. The resulting fruit flavors in the cup are intense and literal, very candy-like, and unlike any other coffee in the world.
The flavor profile is instantly recognizable, and immediately reminiscent of watermelon candy. It is bright and sweet and has some secondary flavors of fresh grape, chamoy, hibiscus, and strawberry.
A Note from Coulter at H&S Coffee Roaster
I believe coffee is a great unifier. It is an experience shared by many across the world. Coffee has never been better than it is right now, and it continues to get better with each passing day. I am driven by this improvement, striving to get better at roasting and preset these experiences to you every day.
I picked this coffee because APRIL FOOLS! I knew this would be a polarizing coffee. The amount of discussion, positive and negative, tells me I have done something I aim to do with my work.
I had my own 'co-ferment' phase last year, when I was seeking out quite a few coffees like this. The shine has since worn down, and I am now more cautious about seeking these out for the H&S menu. But when this coffee came along, with its dehydrated-watermelon co-ferment, I had to jump on it. Watermelon is a rare and exotic flavor in coffee. This one has it in spades. It is a fun and very lively coffee. Juicy, candied, jammy, and sublime. My official notes on this coffee are watermelon jolly rancher, strawberry bon bon, and hibiscus. This coffee will drop to the public in May.
Lastly, I want to state that when engaging with community-driven projects, I aim to be a positive contributor. I want people to have fun when H&S is associated with a project like MCL, and I hope this was fun for you.
