About the coffee

From Coulter at H&S Coffee Roasters:

Mystery coffee, mystery band! Who could be hiding behind the disguises? Could it be... A completely new to me producer, Jose Manuel Mayo, and a pretty nice tropical and fruity Typica Mejorado? This might be the only natural lot of this coffee in the US, or at least I haven't seen it anywhere else. I found its unique character and terroir to be well suited for MCL.

It shows quite a bit more loud, microtonal, tropical character than is usual (to me) for this variety and terroir. It was also a fairly 'wet' coffee, which I was quite interesting in working through our new roaster with. Being the first coffee I've released off the P3000, I've been pretty happy with its initial cups and how it has rested. Despite being, by color, incredibly light, it is also quite soluble and after resting is even displaying a heavier honeyed sweetness and a slight bitter chocolate that I would normally associate with darker profiles. It's given me a lot to think about moving forward.
