Neguesse Debela started operating his first site in Worka Chelbessa in 2017, but quickly expanded in 2019 by buying another washing station a few kilometers away in a small sub-area of Worka Chelbessa called Danche. The two sites execute immaculate washed and natural processed coffees, and are now working to create unique experimental lots in an effort to continue improving the quality of their production.
From Bill - mostly I want to highlight the special process of this lot - Hydro Honey is a hybrid coffee processing method combining elements of natural and honey processes. After picking and sorting, coffee cherries are dried for 48 hours on shaded beds, then fermented in water for 48 hours (24 hours aerobic, 24 hours anaerobic). After fermentation, the cherries are pulped and dried on shaded beds for about 25 days.
