March Mystery Coffee Reveal - Moklair

Time to end first quarter of new Mystery Coffee League and give out first prizes!

In March our club members tried to guess what kind of coffee Charity from Moklair roasted for us and once again it wasn't an easy task. Mystery Coffee was a 59kg experimental nano lot from Colombian farm called Finca Guacobia. Only 3 roasters around the world got their hands on this particular coffee! Here are all the details:

🇨🇴 Colombia Finca Guacobia (San Adolfo, Acevedo, Huila)
Variety: Pink Bourbon
Processing: Anaerobic Natural
Altitude: 1550 - 1650M
Tasting notes: cherry, whiskey, dark chocolate
Harvest: June 2021

About the farmer:
Andres Guaca, 3rd genaration coffee farmer, owner of Guacobia farm together with his wife and two sons.
Five years ago, Andres made a change towards specialty coffees, he began to improve post-harvest practices, with controlled, experimental fermentations. On his 5-hectare farm and on his brother's farm, he began to plant differentiated lots of more exotic varieties such as Pink Bourbon, Pacamara, Geisha, Gesha Aji.

His eldest son is already in love with coffee production, and his dream is to be an agronomist and to continue with the development of the farm.

Fermentation:
After picking the ripest drupes and hand selecting them this Pink Bourbon passed through 400h low temperature fermentation in anaerobic environment.

Process:
20 days sun parabolic dryer and then it is bagged in grain-pro and stored during 1month in a cooler warehouse to stabilise.

We had quite a big number of high scoring guesses this month! Three people took the first place with 24 points!
